 Paleo + Pizza + Cookie = PAZOOKIE

Some of you might be familiar with BJ’s Restaurant and Brewhouse’s Pizookie. Essentially, it’s a huge cookie served with a scoop of ice cream on top. Half pie have cookie, this delicious creation is magnificent, except the fact that its injected with harmful ingredients. Deng it. Back when I witnessed my first Pizookie, I didn’t think twice about the ingredients, all I knew was that it was heavenly. Recently, I discovered that BJ’s now has gluten-free options, YAY! Right? Hate to say it, but just because something has “gluten-free” attached to it, does not mean it’s good for you. Watch out for these advertising snakes, because they creep up on you. I was surprised when I even found that they offer a gluten-free Pizooki, all 1130 calories of it. Yikes! Stay clear of that one.

Since those days, I’ve become a bit of a food snob. I’ll admit it. I’m probably the worst person to go out to eat with. I’m not necessarily proud of it, but I know what I like, and my motto is if I can make the meal myself, you know that one I got dolled-up for and am about to pay for, then it just isn’t worth it to me. I’ve got to be wooed and swept off my feet, like a first date. It’s all about first impressions, ya know? I kind of take it seriously, too. I don’t waste my time at American “favorites” such as In and Out or Chipotle.. yes, I think they’re gross. And don’t even ask about McDonalds, Taco Bell or those fast-food places. Definitely not. So, where could I possibly go out to eat, you ask? I don’t, really. haha Just kidding, of course I do! Eating out is my only pastime (well, not only, but it’s my fave!). I LOVE trying new restaurants, and taste testing all their latest creations. It’s what inspires me on a daily basis in my own kitchen. But, I’m that orderer who constantly asks questions, “Is your ___ grassed?”, “What type of oil do you use?”, “Can I substitute this, this and this”, “But without, this, that and this”,  “Can you put __ on the side”. Luckily, I have an amazing partner who just smiles while I grill the waitress and cusomtize my meal. #bestboyfriendaward

RANT: Information and the knowledge is power. I think it’s so important to be informed, especially when it comes to food and your body. Understanding what you are feeding your body and how your body is fueled, could be the most important thing you do in your life. Without the right “ingredients” what type of life would we have? Over-weight, unhealthy, depressed, hormonal, aches, pains, the list goes on. In my book, that’s not living. END RANT

The fact of the matter is, let’s enjoy life and enjoy what we eat. Hey, I want a Pizookie, don’t you? And one that isn’t going to make me feel sick. Well, grrrreeat news. You’re in luck! I’ve created a PAZOOKIE= Paleo, Pizza, COOOOKIEEEE (cue cookie monster voice). Similar to BJ’s famous creation, but more than half the calories, fully gluten-free, dairy-free, grain-free, and FULLY ahh-maz-ing!

Ingredients
  1. 1/4 cup grass-fed butter
  2. 1/4 cup coconut palm sugar
  3. 2 tablespoons honey
  4. 1 large egg, room temperature
  5. 2 teaspoons vanilla
  6. 1 cup blanched almond flour
  7. 1 cup cashew flour
  8. 2 tablespoons coconut flour
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon sea salt
  11. 1/4 cup Enjoy Life mini chocolate chips
  12. 1/4 cup pecans, chopped
  13. 1/4 cup walnuts, chopped
Instructions
  1. Preheat oven to 325 degrees F.
  2. In a food processor or stand mixer cream butter, coconut sugar, honey, egg, and vanilla for about 15 seconds until smooth and fluffy.
  3. Add the almond flour, cashew flour, coconut flour, baking soda and sea salt and mix again until combined, about 30 seconds. Scrape down the sides of the bowl if needed in order to incorporate all of the flour. Pulse once or twice more.
  4. Stir in the chocolate chips, and nuts by hand.
  5. Divide dough into four sections, one per individual container. Roughly the size of your palm. (The cookies don’t spread much so create the size and thickness you want prior to baking them.)
  6. Bake on low, at 325 for 9-12 minutes, then rotate deep dish cookies, and bake for an additional 12 minutes until slightly golden around the edges.
  7. Add a scoop of your favorite ice cream, I recommend Jenis Splendid Gluten-free Ice Creams or Luna And Larry's Coconut Bliss.
Container options
  1. You can use a container per your liking, just make sure it is oven safe. My favorites or mini cast iron containers, or pie dishes like I used in this recipe.
