Over the years, I’ve realized that baking is a real science. Especially as I changed my dietary habits, baking took on a whole new concept. To some, it may seem just like this thing moms do around the holidays or a pastime for girls on Friday night in with their girlfriends. But honestly, the whole concept is pretty fascinating.  I won’t bore you with the history of baking, but if you’re a foodie nerd like me, honestly, Google it. 

The fascination for me comes from the fact that you can take this mixture of ingredients and sizes in different forms of liquid and powder, and then put it into heat at a very specific temperature for a distinct amount of time and BOOM! You’ve created a delicious edible substance. Okay, maybe I’m nerding out a little, and thinking about it too literally. I guess what I love is that there is no one way to creating something – and that goes for everything in life. Everyone is made up different stuff, and just because we are different, that doesn’t mean we can’t all enjoy the same wonderful things in life. Like Chocolate Chip Cookies.

Quick question: Cookie or Brownie?

Hands down, I am a cookie person and even more so, a sweet vs. savory person. I’d rather a soft warm delicious cookie over pie, cake, brownies or anything else. So, when I make a batch of homemade cookies, whether macaroons or chocolate chip, I don’t take it lightly. I mean, this is serious stuff people. 

During my time cooking and baking Paleo/Gluten-free/dairy-free/ so on/so on… I’ve made a lot of mediocre food. Sometimes I give myself a big pat on the back and toot my own horn, and other times.. well, I get frustrated because I just wasted time and money on some blah creation. It’s a constant challenge, and sometimes you get it just right.

This is that time.

The Creation of Your New Favorite Dark Chocolate Chip Cookie

I thought I had done it before here and here. Don’t get me wrong, those two recipes are still very delicious and worth sharing. But this new Dark Chocolate Chip Cookie recipe is better. These cookies are every ounce of what a chocolate chip cookie should taste like, feel like and smell like. They are little rounds of heaven. Very dangerous in our home because I will eat all of them. When it comes to dark chocolate and pair that with cookies… all self-control has gone out of the window.

They are every bit of soft as they are chewy. And most importantly, they are completely dietary friendly! Whether you are Paleo, Gluten-free, or Dairy-free (must withstand eggs ok), this recipe tackles them all.

Dark Chocolate Chip Cookies
Serves 4
A delicious paleo and gluten free friendly dark chocolate chip cookie.

Ingredients
  1. 1 cup almond flour
  2. 1/4 cup coconut flour
  3. 1 teaspoon baking soda
  4. 1/4 teaspoon sea salt
  5. 6 tablespoons coconut oil, melted
  6. 3/4 cup coconut sugar
  7. 6 tablespoons raw almond butter (I like Crunchy Almond Butter, but you can choose your preference.)
  8. 1 1/2 teaspoons vanilla extract
  9. 1 large egg, room temperature
  10. 1 cup Dairy-Free Dark Chocolate Morsels ( I use the brand Enjoy Life Foods)
Instructions
  1. Preheat the oven to 350 °F.
  2. In a mixing bowl, stir together all of the dry ingredients – almond flour, coconut flour, baking soda, salt and set aside.
  3. In a large mixing bowl mix together your coconut oil and coconut sugar until combined. Next, add in the almond butter and vanilla extract until well combined.
  4. Beat in the egg.
  5. Then, add the dry ingredients into the wet ingredients and mix until well combined.
  6. Lastly, stir in 1 cup of dark chocolate chips.
  7. Line a baking sheet with a piece of parchment paper and roll the dough into 12 golf ball sized dough balls and place them evenly on your baking sheet.
  8. Press the dough balls down slightly with the palm of your hand.
  9. Bake for 10-15 minutes until the cookies are golden brown. Note: once you take them out, they will continue to cook a little as they sit on the baking sheet.
  10. Enjoy!
